Executive Chef
Emily Mallen

Chef Emily's journey in the hospitality industry began 15 years ago upon her graduation from the George Brown College Culinary Arts Program. Her journey included a number of positions all over Canada, notably Muskoka, Toronto with Chef Mark McEwan, and Whistler.  About 5 years ago, Emily joined Lakeside Seafood & Grill as Sous Chef, however with her incredible talent, passion for cooking and natural leadership skills, she quickly aspired to Executive Chef of Living Water Resorts. ​


Chef Emily and her incredible team have developed Lakeside into a premier destination in Collingwood. Emily's passion for travelling will always be found in her inspired land to sea dishes with unique flavours, made with only the finest and freshest ingredients.


Lakeside guests describe her food in online reviews as, “Michelin stars in my opinion,” “…amazing! Very creative dishes,” “Seafood is great, flatbread had lots of flavour and the mussels were awesome,” and “Calamari is some of the best that you’ll ever have”. ​


During the pandemic, Chef Emily served the local community with fabulous take-out and home delivery meals. As one takeout customer stated online: “A great local restaurant in normal times. And super takeout during the crisis. The chef went above and beyond to make our takeout experience memorable!”


Restaurant Manager
Mark Pacardo


Mark Pacardo is a seasoned hospitality professional with over 15 years of hospitality service and experience. Mark began his career in 2007 as a Banquet Porter at Deerhurst Resort in Huntsville, Ontario.


Mark progressed through Banquet Serving and Bartending, before becoming the Banquet Bar Supervisor. In 2016, Mark transitioned to the JW Marriott Resort in the capacity of Food & Beverage Supervisor.


He quickly created an impact and became the 2017 JW Marriott worldwide Quarter One Leader. In December 2018, Mark moved to Collingwood and accepted the role of Assistant Restaurant Manager at Oliver & Bonacini Restaurant, Blue Mountain.


In December 2020, Mark joined us at the Living Water Resort & Spa in the role of Restaurant Manager at Lakeside Restaurant & Grill.


Mark’s progression over the past 15 years has highlighted his passion and dedication to guest service, through the Food & Beverage profession. His passion lies within creating advanced speciality cocktails and creating a welcoming ambiance for our guests.


In his time away from Lakeside, Mark enjoys a great game of golf at our Living Stone Golf Resort and outdoor adventure experiences.
